The family of Gianni Calogiuri has been producing been Vincotto Condiment from locally grown Negroamaro and Malvasia a era grapes from the Puglia Salento region of southern Italy since 1825.
The Vincotto is placed into oken Kegs, along with a vinegar "mother" and figs and begins the aging process. The fig Vincotto vinegar has become all the rage, thanks to creative chefs at upscale restaurants. The rich, slightly sweet flavor of fig Vincotto vinegar readily lends itself to salad dressings and gourmet marinades, sauces, cheeses and ice creams.
Use in salad dressings, and sweet-and-sour dishes containing fish and redmeat or with cheese and ice creams.
