Caponata is a pickled Sicilian appetizer that can be used as a spread or as a pasta sauce. Our caponata is a treasured family recipe crafted in very small batches that involves a slow and attentive 6 hour cooking method. We first cut and soak eggplant in a salt water solution, then we drain and remove any additional water from the eggplant with a speaclized pressing method, then we fry the eggplant until golden brown. We slowly sweat onions and celery until slightly tender, incorporate tomatoes, sugar and vinegar, then add olives, capers and pine nuts, followed by adding the fried eggplant to rest of the ingredients and slowly cook everything together. The result is a savory, slightly sweet and flavor packed delicacy.
