Agnolotti are a filled pasta that is an iconic staple in the Piemonte region of Italy. Agnolotti is the plural form of agnolotto. 

Our Agnolotti are a rectangular shape which is commonly referred to as agnolotti al plin. Plin means "a pinch”. Typically the process involves a pinch of the thumb and forefinger between individual mounds of filling to close and seal the small pasta pouch.

We use a mixture of Neapolitan and semolina flour and eggs to create a pillow shaped pouch. Each little pouch of Agnolotti is filled with fresh cheeses, vegetables and spices to create the most delicate, supple and plump dumpling of pasta. 

Authentically handcrafted with GMO-free grains, and without the use artificial flavors, colors, preservatives, or additives.

Cook Time

15-20 minutes

• Boil 4-5 quarts of water with 1 table spoon of salt.

• Add pasta to boiling water, return to a full boil then immediately reduce to a gentle boil, and stir occasionally.

• Taste and cook until pasta is tender with a bite.

• Save 1 cup of pasta water and add a portion into your prepared pasta for depth and moisture.

• Drain, sauce, and serve.

Dough: Non-GMO Neapolitan 00 flour, Non-GMO Semolina #1 flour, eggs, water, salt.
