Fusilli (little springs) short spiral shaped noodles are also known as "Rotini", or simply, spirals. The corkscrew shape helps to retain a variety of sauces better. Good served hot or cold, and is excellent as a Tomato or Spinach flavor. Enjoy this easy spring dish, Fusilli with tomatoes and gorgonzola.
Fusilli con Pomodori e Gorgonzola
1 lb. Fusilli
1/4 cup olive oil
6 Tbsp. pine nuts
2 garlic cloves chopped
5 Roma tomatoes(cut into bite-size pieces)
1 cup Dolce Gorgonzola
Salt and pepper to taste
1/2 cup fresh basil leaves (packed)
Bring 4 to 5 quarts of salted water to a boil. Combine olive oil, pine nuts, and garlic in a small skillet. Cook for 5 min. on medium low. In a large bowl, combine tomatoes with olive oil mixture (stirring to mix well). When pasta is done, drain and add to bowl. Add cheese, salt, and pepper, stirring to coat well. Add chopped fresh basil leaves and serve hot or at room temperature. Boil 1 lb. of fresh Fusilli in 4 to 5 quarts of salted boiling water for 3 min. Do not over cook. Drain the Fusilli. Toss with sauce.
