Spaghetti (literally means strings) long, thin, round strands. A great shape noodle for a variety of sauces, such as Assenti's Homemade Meat Sauce. For a simple dinner try the traditional Spaghetti and Meatballs dish. Or, if you are in the mood for something a bit out of the ordinary, but traditional nonetheless, try Spaghetti alla Carbonara.

Spaghetti and Meatballs

1 lb. Fresh Spaghetti
1 Assenti's Homemade Meatballs in Sauce
1 Assenti's Homemade Marinara Sauce
Grated Parmesan

Add 1 lb. fresh Spaghetti in 4 to 5 quarts of salted boiling water, and cook until Al Dente. Drain fresh Spaghetti and add to heated Assenti's Homemade Marinara and Assenti's Meatballs in Sauce. Top with grated Parmesan.

Spaghetti Alla Carbonara

1 lb. fresh Spaghetti
10 oz. diced Pancetta
5 egg yolks
4 oz. grated Pecorino Romano
4 oz. grated Parmigiano Regiano
Salt and freshly ground pepper
4 oz. Heavy cream.

Beat the eggs and the cream together with a pinch of salt. In a large pan cook the Pancetta until it browns. Add 1 lb. of fresh Spaghetti in 4 to 5 quarts of salted boiling water, cook until Al Dente. Drain the Spaghetti and add it to Pancetta pan. Stir well. Remove the pan from the heat and stir in the beaten eggs and cream and a small quantity of the cheese. The eggs will coagulate as they come in contact with the hot Spaghetti so it is very important to work quickly. Stir the Spaghetti until coated well, add the remaining cheese, top with fresh black pepper.
