Provolone cheese is a southern Italian cheese that is straw white in color, with a smooth texture. Milder, more fresh Provolone can be eaten on its own. Once it is aged it is typically used for cooking. Assenti's Pasta has an imported provolone suitable for a midday snack paired with fruits, dry meats, and a dry red wine.
