All Italian Cheese made from sheep's milk fall under the title of Pecorino, despite the fact that they may vary greatly in texture and flavor.

Pecorino Romano
One of the oldest Italian cheeses, with a salty and more sharper taste
due to the longer maturation process it endures.

Pecorino Pepato

that adds to an extremely piquant taste.

Cacciotta Subiaco

yet creamy flavor. Offers a softer, more mild texture.
