Mizithra cheese is a classic Greek cheese made from the whey left over from the production of feta cheese.  This hard grating cheese comes in either a creamy, soft, fresh version or in a pungent version which is aged for about nine months until it is firm enough to grate.   It can be eaten on its own or cut into chunks or grated over fresh pasta dishes and salads.
