Gorgonzola was named after a village near Milan, is traditionally made with cow's milk.  An Italian Blue Cheese that is creamy in color with greenish- blue veining throughout. Young, it has an almost sweet, mellow flavor.  Aged, once aged it can become quite powerful.  Assenti's Pasta carries carries "Cremeficato", or "Dolce Latte" imported from Italy.
