Italian law specifies that Fontina cheese (Fontina Val d'Aosta)can only be made in the Val d'Aosta region in northern Italy. It is a young cheese with a mild, nutty flavor and creamy texture. The rind ranges in color from a light to dark brown. Although it is great on its own, since it melts so well, it is often used in cooking.
